These Delicious Yummies are eaten regularly at our house, usually for breakfast, but have been known to be eaten at all times of the day!! We love to use the red potatoes, but often use the russet potatoes. Potatoes, for me, are a comfort food. There are so many things you can do with them: Baked potatoes, twice baked potatoes, whipped creamy ones & mashed lumpy ones, potato cakes….the possibilities are endless!! Hope you like this recipe!!! Enjoy!!
Ingredients:
15 medium russet or 20 small red potatoes (We LOVE the red ones!)
1 small yellow onion
canola oil
1/4 tsp garlic salt
1/4 tsp celery salt
1/4 tsp seasoned salt
1/2 tsp dried chives
1/4 tsp dill weed
1/4 tsp ground black pepper
1 TBSP paprika
sea salt to taste
Directions:
- Chop Potatoes into chunks & put in a pot of boiling water. Boil Potatoes for approximately 10 minutes or until tender with a fork test through a potato chunk.
- While potatoes are boiling, mince onions & saute in olive oil until clear, soft & slightly browned. Set aside.
- Drain potatoes & add to the onions & saute. Add more olive oil. Cook on medium heat.
- Add all of the seasoning & herbs to potato/onion mixture. Cook until potatoes are browned & slightly crispy in spots & flavors have melded together. This should take approximately 5-8 minutes.
*There are a lot of salty items in this recipe, so if you’re watching your salt intake, be cautious or just omit that & just use fresh herbs & maybe a salt substitute like Mrs. Dash, etc. I tend to even add more salt & pepper at the table. I’m a salt-aholic!!
