Scrambled Tofu

While on the Breakfast Subject lately, here’s another favorite!

Ingredients:

4 tsps olive oil

4 green onions, chopped, including the tops

1 block of firm tofu, crumbled

1/2 tsp turmeric

1/2 tsp garlic powder

1/4 tsp ground cumin

1/4 tsp ground black pepper

2 tsps tamari (or any g-free soy sauce)

*Optional: saute mushrooms & tomatoes in it as well, if you wish.

1) Heat the oil in a non-stick skillet (I LOVE my red copper skillet!!)

2) Saute the green onions in the oil for 3 minutes (along with the mushrooms, if you’re putting those in)

3) Add remaining ingredients & cook until tofu gets browned slightly (I like mine a little crispy in spots), usually about 5 more minutes. After about 2 minutes, add in your tomatoes & some salt if you wish.
