We LOVE Spinach here & we use it in a lot of dishes! It’s a Wonderful source of vitamins K & A, manganese, folate, magnesium, iron, copper, vitamins B 2 & 6, vitamins E & C, calcium & potassium, as well as many other benefits, plus it’s just delicious! Here is a very simple & tasty recipe if you just want to amp up your spinach dish!
Ingredients:
10 oz. of frozen chopped spinach
1/2 cup of Bragg’s nutritional yeast (Bragg’s is the Best we’ve tried)
1/2 tsp garlic salt
1/4 tsp ground black pepper
1/4 tsp onion powder
1/4 cup soy or almond milk (unsweetened)
1 TBSP Earth Balance butter
Directions:
- Boil spinach in water until all the water has dissipated & spinach is cooked through.
- Turn off heat & place to side.
- Place in all other ingredients, ending with the wet ingredients, mix together. Add more soy milk as needed, if too dry. Heat on low until no longer watery.
*Around the Holidays, I like to up the ante & place in oven on 350°F for approximately 10 minutes or so with a G-free Ritz-like cracker & melted butter mixed together & spread over the spinach dish. When it’s toasty & browned, I take it out of the oven & serve. A delicious & healthy side dish for the Holidays!!
