A side of Peas, please

One of my least favorite of vegetables is frozen peas, even though they’re good for you. I know, shame on me. I like to make it a little more palatable so I can enjoy it more & benefit from all of the vitamins it offers. Here is a recipe that I hope you enjoy! Spring is the perfect time to have this recipe, especially for Easter dinner.

Ingredients:

1 Bag of frozen peas

2 Tbspns butter

1 small onion, diced, sauteed in olive oil

1/8 tsp lemon juice

Grated block of parmesan cheese

Salt & ground black pepper, to taste

1) Cook your dived onions in olive oil, in a saute pan & set aside.

2) Boil the bag of frozen peas until tenderness you wish. Drain. Place in bowl & stir in butter, and add sauteed onions. Stir in lemon juice

3) Grate some Parmesan cheese into the peas, to the amount of your liking. I like about an 1/8 – 1/4 cup. Salt & Pepper to taste.
