Artichokes and Basil Mayonnaise

Well, this is the season for artichokes & why not try some neat recipes besides the popular well known dip that so many love? Let’s try something new! How about a mayonnaise dip for artichokes? It has a great taste & gives you a unique appetizer for yourself at home or to bring to a party! Let me know if you try it & what you think! πŸ˜‰

Ingredients:

1 Cup Just Mayo or Vegannaise

1/4 cup chopped fresh basil

1 TBSPN fresh lime juice

2 Garlic cloves, minced

1/2 tsp dried minced onion

1/4 tsp Paprika

Salt (for in water) & to season dip

Ground black pepper (to season dip)

Six 10 oz. artichokes, tips of leaves trimmed off

Directions:

1) Mix the first 8 ingredients in a bowl. Season with S & P.

2) Cook artichokes, covered, in a large pot of water with salt. Boil until tender when pierced with a knife or fork, for approximately 30-35 minutes. Drain well. Blot dry if needed. * You can also grill artichokes cut into quarter sections with olive oil, S & P on grill for about 15 minutes, turning occasionally to make sure all sides grilled evenly. **For this recipe, I grilled them.

3) Serve artichokes warm or chilled to your preference, with the Basil Mayonnaise dip.

* Note: You can prepare the Mayonnaise dip & the Artichokes a day ahead of time. Cover & refrigerate separately. The dip will keep up to 3 days in refrigerator.

**The mayonnaise dip can be spread on sandwiches too!
