4 Ingredient Cookies

I’ve been trying to cut back on sugar & wanted a snack to go with my tea at my afternoon tea time. I needed something not too heavy & not sugary or unhealthy. So I decided on this vegan, gluten free, simple snack.

This recipe was delightful with a lovely tea. It doesn’t make a lot, and is so simple & fairly quick. There are options for toppings if you’d like, or you could keep it plain. Hope you enjoy them.

Ingredients:

1 cup almond flour

1/8 tsp salt

1/2 tsp baking powder

1/3 cup banana, mashed

Directions:

*Preheat oven to 350° F and line a baking sheet with parchment paper.

1) Mix all of the dry ingredients in a small bowl. Mix in the mashed banana until combined.

2) Place on a baking sheet lined with parchment paper. Place by dropfuls 2″ apart on pan & bake in 350°F oven for 13-16 minutes. Thirteen minutes seems to be the best time. You want them soft but lightly browned.

Options:

You can make a dark chocolate ganache, and pour on top or swipe melted butter on top and sprinkle on cinnamon sugar. I’ve tried both & they’re equally good. Hope you enjoy!
