5-6 fresh tomatoes, mix of beefsteak & Heirloom variety
2 peppers, 1 green bell & cubanelle
2 large cloves of garlic
1 large red onion
Juice from 1 small lime
1 TBSPN sugar
1/4 tsp ground cumin
1/2 tsp chili powder
1 tsp Maldon’s sea salt
Ground black pepper, to taste
1/4 tsp ground coriander
Fresh or dried parsley, to taste
*Mix all together in a food processor. Pour into bowl & serve with tortilla or nacho chips.

What a nice treat for this gloomy afternoon! Everyone is overflowing with tomatoes, what a great idea!! Looks easy enough even for me to make!
