Hello there everyone!! It’s been some time since I’ve posted. How’s everyone doing? It’s so nice to see bits of Spring emerge, from the buds on the trees, to the flowers beginning to emerge from the ground from their happy winter slumber. I’ve particularly enjoyed the warmer weather and seeing green and pastel colors, as well as having longer days again! Spring and Summer make me happy! What’s your favorite season? We’re getting a lot of projects done around the cottage (my hubby and I) and we’ve been enjoying having our son home from college (being remote). I’m trying to wrap up my first cookbook that I’ve been working on for a few years and I’m very excited to see it come to completion! I’ll announce when it’s out in publication here soon!
I’ve been getting energized in my mornings for months now with a delicious smoothie. They’re packed full of nutrients and yummy flavor! Here’s a recipe that I love! Hope you enjoy it!
I have all different kinds of smoothies, but this one is one of my favorites!
(I make this for 2 each morning for my son and myself, on weekends my husband joins us, so I triple it & we all wait to see who gets the rest 😃) You can just half it if you’re just making for yourself. This is a double recipe.
3 cups plain unsweetened almond milk (I like Califia Farms)
2 scoops of Vanilla flavored Vega plant based protein & greens powder
1 cup frozen dark pitted cherries
2 Tbspns flaxseed meal
2 heaping Tbspns almond butter (make sure just almonds in butter- you can even make your own by putting almonds in a good processor & mix until it becomes buttery like PB)
A large handful of frozen spinach (you won’t even notice a flavor)
Cacao chips (I love Ghiradelli’s 100% cacao chips for this recipe)
* You can add ice after you blend a bit, then add the ice and blend more if you’d like. The frozen cherries and spinach make it cold enough for me though. 😉
Blend all together and enjoy!! So yummy & good for you!!
