Hello and Happy Monday!! Hope everyone enjoyed their weekends! To all of the great dads out there, Happy Father’s day!! We celebrated one of the greatest dads this weekend, my husband, Paul. He’s the real deal. He’s a caring, loving, fun, silly and talented guy! He is always there for our children and for me. Honestly, he’s there for everyone. It was so nice to celebrate him and on such a lovely day too! Our daughter came over and we all enjoyed a delightful breakfast on the back deck and had a lovely visit! We all stayed together for a yummy lunch, shared lots of laughs and did some catching up. Paul opened his gifts and we went swimming. The Beach Boys were blaring in the background and games were played. When my daughter left to go with her boyfriend to his parents’ celebration for his Dad, my husband put together his new gifts and more swimming continued. After a yummy dinner and a couple of movies, our son, husband and I retired for the night after a long, fun day in the sun. Happy when he’s happy.
On Saturday before Father’s day, we went for a hike to a sanctuary near our little town. It isn’t quite what it used to be as there were a lot of tree limbs down and a bit weedier than usual (ticks are a big worry in our area), but it was lovely to escape for a little respite and exercise in the great outdoors! It used to be a little more crowded years ago and was much quieter than usual. We were the only ones around. Hoping that it gets back to its original glory and more populous soon. It was always a lovely place! Still is though.
On Thursday evening, we enjoyed a fun evening with an outdoor movie night on the big screen and popcorn & hot tea (it was a chilly evening). Popcorn popped on the stove top with coconut oil, pink himalayan salt, and a hint of melted grass fed butter is so yummy on occasion. It’s a special treat for us sometimes with a movie, especially on the big screen outdoors!

Recipe of the week:
“Ranch style” mix for topping tofu, chicken or even potatoes!!
Ingredients:
4 Tbsp nutritional yeast
2 Tbsp dried parsley
1/2 Tbsp dried dill
1/2 Tbsp onion powder
1/2 Tbsp garlic powder
1/2 Tbsp minced onion
1 tsp dried chives
1 tsp pink Himalayan salt
1 tsp ground black pepper
Directions:
– Stir all ingredients together. Drizzle food with olive oil and sprinkle the ranch mix on top. Bake according to food temp and time.
