Hello there!! How’s everyone’s week going? I had a busy weekend & week and have had a ton of projects going on at home. We’re still painting the cottage & working on building new shutters for our home as well. Little by little, I’m preparing the garden for Fall & Winter and harvesting the last of our veggies. The clean up and prep for the next season has been tiring but productive as we prepare for the warmth & coziness of snuggling in for the colder season. I’m really looking forward to sitting by the fire and catching up on some reading and preparing for my next venture, to be announced soon. The holidays are approaching soon and getting ready for that as well! It’s always a busy time, but exciting!! I’ve been having a wonderful time crafting and organizing, cleaning for Fall and keeping busy with projects.

One of the things I’ve noticed is that I haven’t seen any of the deer that was visiting our yard for awhile. I’m thinking we’re making too much of a ruckus lately in the yard or maybe they’ve moved on to other gardens. It’s very possible that there’s not much for them to munch on lately either. I do miss seeing them. (Maybe they’re just back practicing their flying for Santa 😉🦌 )!
Last evening’s dinner were delicious black bean burgers, homemade fries, and a variety of roasted veggies. Here’s the recipe for our black bean burgers. Hope you love them as much as we do!

Black Bean Burgers:
Ingredients:
1 red onion, diced
1 red pepper, chopped
avocado oil, for sauteeing veggies
2 cans black beans, drained & rinsed
1 cup all purpose gluten free flour
1 cup gluten free quick oats
2 tsp garlic powder
2 tsp onion powder
2 tsp celery salt
1/2 tsp paprika
pink himalayan salt & ground black pepper, to taste
1/2 cup gluten free BBQ sauce
coconut oil, for frying burgers
Directions:
- Prepare onion & pepper & saute in a saute pan with avocado oil for about 3-5 minutes to desired doneness. Set aside. Drain and rinse canned black beans.
- Place beans in a large bowl and mash until all mushy. Add the chopped onions & peppers. Mix in all of the rest of the ingredients, minus the coconut oil. Form into patties.
- Place in same saute pan, with about 1-2 Tbsps, or as much as you’d like, heat oil til melted & place 3-4 patties on pan & cook for about 4 minutes on medium heat. Do not let burn on pan. Flip patties over for another 2-3 minutes. You may need to add more oil as you cook more. They make a good amount of patties! They’re delicious with or without a gluten free bun, and your favorite condiments!! Enjoy!!


All of these projects are a lot of work, but SO SATISFYING!! These bean burgers are AMAZING!!!❤️
