It’s been a couple of weeks since I’ve posted here as my husband had back surgery, but he’s recovering nicely now. My focus has been on him. As we’ve had this time together, we’ve been having a wonderful time having long talks and taking naps, he’s been focusing on writing his second book and I’ve had time to think about my next step in my career. Every now and then, it’s very important to step back, reassess, maybe even get some long deserved rest. During this rest, recovery and reassessment, I’ve made some delicious food and even wrote out my menu and plans for Thanksgiving this year.

Here are some of the recipes we’ve made lately:

Gingerbread “Latte” coffee
Gluten Free applesauce donut mini muffins
Gluten Free crepes with strawberries and coconut vanilla cream
Cinnamon roll pancakes with caramel topping
Gluten Free apple bundt cake with caramel topping

Apple pie with a gluten free crust

In the next couple of days, I’ll be changing my decor back to a “Fall with a touch of Thanksgiving-feel” decor. I may be posting some crafting soon as well. Hope you all have had a safe and fun Halloween! ๐ŸŽƒ๐Ÿง™๐Ÿงน๐Ÿฆ‰๐Ÿ๐Ÿงบ

Christmas is around the corner. If you’re looking for a gift for someone who would like gluten free/plant based recipes or you’d like it for yourself for recipes for the holidays & throughout the year, consider purchasing my cookbook, ” Plant Based Living for the Gluten Free Cook”

My husband, Paul’s first book is a great gift idea too!!

Both books are available on Amazon.
