Midweek and a Peanut butter treat

It’s Wednesday evening and it felt like a great night to have a special treat and peanut butter was on my mind. So while binge watching “Wheel of Fortune” with my guys and relaxing after a long day, I made these yummy, easy peanut butter cookies. These are great for when you don’t want to spend a long time baking. Enjoy!!

Ready for the oven in just a few minutes prep time!

Ingredients:

1/2 cup stevia

1/2 cup Swerve brown sugar substitute

1 cup natural creamy peanut butter

1 egg

1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 350° F.
  2. Line 2 baking sheets with parchment paper.
  3. Mix all ingredients in a large bowl using a spoon. Roll dough into small balls. Place cookie balls on parchment paper on sheets, a couple inches apart. Flatten cookie balls with fork in a criss cross pattern.
  4. Bake for 11 minutes. Cool for a couple of minutes on a cooling rack. Serve warm or cold.
