Hello All!! Happy St. Paddy’s Day to you!! Today, I feel the climate is fitting, with cloudiness, fog, and a gentle mist in the air. For meals today, we’re celebrating with green & orange colors (Menu down below).

A little green on this rainy irish day

Even though it’s a bit on the early side, I’m taking out our spring and summer wardrobe, for that transitional period of weather. Then in a month or so, I’ll be packing up the winter wardrobe. It also gives us an opportunity to see if clothes still fit, if they’re in good condition or showing wear and tear, or just no longer suited to our taste. It lets me know what needs to be replaced or repaired. This goes for shoes and handbags, bathing suits, accessories,etc.

Breakfast:

Overnight (from last night) carrot cake oats

Banana

Matcha tea

Yum!

Lunch:

Leftovers from last night’s dinner which was seasoned roasted salmon, whipped potatoes, seasoned roasted broccoli, sautΓ©ed and seasoned cabbage

Wild caught Alaskan salmon, dairy free whipped potatoes, seasoned roasted broccoli, and sautΓ©ed cabbage. Delish!!

Dinner:

Gluten-free penne pasta with a kale pesto sauce and a massaged kale salad*

Dinner!

Dessert:

Homemade vanilla ice cream with crème de menthe with coconut whipped topping, and homemade hot fudge

  • The massaged kale salad is a recipe from the Han cookbook by Hannah Aylward (It’s delicious!)
  • The carrot cake oats and the pasta with kale pesto sauce is from “The Blue Zone” diet. Both simple and delicious recipes.
  • The poem is a well known poem among the Irish, and I’m sure most or all of you have heard it before. My grandfather had recited it many a time. He was very proud of his Irish culture. Every year I think of him singing his Irish songs and reciting Irish poetry and the parade we all reunited for the Sunday after St. Patrick’s day every year. We don’t attend the parade much anymore, but the wonderful memories stay in my mind.
