A Lovely Spring Weekend πŸ¦‹πŸŒž

on

A lovely weekend began on Friday evening with a yummy gluten free pizza dinner while watching some 80’s summer movies with my hubby and son.

Delicious cauliflower crust with homemade pesto sauce, beefless ground and sauteed onion, dairy free cheese and fresh spinach

On Saturday, we had a delicious breakfast of mini quiches, seasoned white beans, avocado, dairy-free yogurt with cinnamon, grapefruit and matcha tea.

Later in the day, the outdoor projects continued. We started work on the firepit area. More stone work was started. We enjoyed a nice break from the work by having our first lunch alfresco for the season! The weather was sublime.

Not finished but so exciting to see it nearly done and looking better and ready to test it out with a bonfire πŸ”₯

On Sunday, after a wonderful breakfast and a relaxing respite on the finished front patio with our coffees, in which we discussed what’s next on our To-Do’s before summer comes, we started working more on the finishing details (still more work to do, as laying brick work around a patio especially to a firepit area is like putting together a puzzle). The firepit was redone last year. For many years, we had peastone as the patio around the firepit. It was inexpensive, and gave us that “Cape Cod look”. We’ve had to replenish the layers through the years and those little stones always ended up in the grass as well as did not feel good on bare feet (I am barefoot a lot). After another lunch alfresco, while getting in some sun (got my first sunburn of the season as well, uh oh), the work continued, along with a break and a round of a rummy card game with our son outdoors. At a nice stopping point, we had dinner and went back outside to enjoy our first bonfire of the season! It was a lovely evening, first day of May!

Still need to plant flowers and put in the finishing touches like furniture, and such, but patio is complete! (Pay no mind to the garden hose hanging from the arbor & these three window boxes have seen better days)
breakfast on Sunday was paleo pancakes with almond butter sauce and fresh berries (recipe from Hannah Aylward’s cookbook)

A Beautiful weekend, and then the week begun again with weekly To-Do’s and work. We’ll be taking time off from our outdoor projects for some pressing matters and Mother’s day weekend, but already thinking about the projects to come.

Hope you all had a lovely weekend and have a Beautiful week! We’re expecting rain most of this week, but our plants and grass will grow and this will allow me to get some work done as well as indoor chores done. Have a most wonderful Mother’s day weekend in this coming weekend whether you are celebrating as a mom of children, of animals, or are celebrating your mom. To all of you, Happy Mother’s Day!! 🌺🌼🌹

The pond was opened this weekend as well! πŸ€—

Hard to tell in the early evening darkening sky, but the white flowers are lovely
