A Beautiful Weekend, Waffle Recipe and lots of apple-y goodness 🍎

Hello Everyone! Did you have a lovely weekend? This weekend was filled with beautiful weather, a fun afternoon with my husband and son, a relaxing and fun afternoon apple picking, and a visit with my whole family.

On Saturday, after picking apples, I made homemade applesauce. This is an applesauce recipe that’s made every year. My husband and children love this recipe! It’s a recipe that was adapted from my husband’s childhood Home Economic’s class many years ago. It’s very special to us all. On Sunday, a delicious breakfast was had with my husband and our children. We enjoyed cinnamon and nutmeg waffles with our homemade applesauce along with breakfast sausages. Recipe below.

With all of the delicious apple varieties picked, like McIntosh, Macoun, Golden Delicious, we’ll be making apple pies, apple cake, more applesauce, apple muffins, baked apples, and maybe even a caramel apple or two. What apple recipes do you enjoy?

Cinnamon and Nutmeg Waffles

Ingredients:

2 cups gluten free all purpose flour

1 Tbsp organic granulated sugar

4 tsp baking powder

1/4 tsp salt

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

2 eggs, room temperature

2 1/2 cups almond milk

1/2 cup of dairy free half and half (we love Califia Farms Better half)

1/2 cup coconut oil, melted and cooled

Directions:

1) Gather all of the ingredients. Melt coconut oil on the stove and set aside to cool. Take the eggs out to sit room temperature. Take out the rest of the ingredients.

2) Preheat waffle oven.

3)Mix together the dry ingredients in a large bowl. Add the wet ingredients and mix with a whisk until all incorporated and smooth. Do not overmix.

4) When the waffle iron is preheated, pour in batter and cook until ready. Should make 6 beautiful and thick waffles. Pour any topping you wish on top along with real maple syrup (optional).
